DEMAND for Scottish shellfish remains high, with the market for all species remaining buoyant throughout the last year. The Scottish Shellfish Farm Production Survey 2005, published recently by the Fisheries Research Services, shows that the industrycontinued to be dominated by small producers, although there was a continued trend toward large companies contributing significantly to the annual production of all species.
