Protein is one of the most sought out nutrients by today's consumers. And with many trying to increase their intake of plant-based foods, varied plant proteins-soy, and increasingly pea, being the most common-are fueling innovation in the beverage sector.Some plant-based ingredients, however, are not significant sources of protein, yet still are used in the manufacture of milk substitutes. These ingredients include almonds, coconuts and other nuts and grains.
