Does animal welfare affect food safety?

The significance of animal welfare for subsequent food safety is discussed. Individual aspects considered include: differences in intensive vs. traditional production; effects of animal stress on safety of meat and milk (implications of increased incidence of DFD and PSE, blood spotted and bruised meat, increased milk somatic cell counts and reduced animal immune function); production practices that affect animal comfort (genetic selection, antibiotics resistance, transport); influence of stunning and slaughter methods on quality of animal products; case studies on effects of more humane handling and transport procedures for meat quality and safety; and future outlook (producer considerations, importance of consumer education and communication).
