摘要

This paper examines how health information is reshaping consumer food preferences in the USA as well as the nation's food and agricultural sectors. It is suggested that with the expansion of the Internet and other sources of information, the potential to educate more consumers about the link between diet and health is growing, thereby increasing the potential for substantial reductions in nutrition-related disease. However, the great wealth of information on diet and health may often prove overwhelming and counterproductive. Information overload may lead consumers to disregard all information from all sources.
