THE cattle markets tested 80 dollar last week and, on the northern Plains, failed to hold the mark as even one of the market's most reliable allies — the cold and snow of the blizzard that broke across much of the West through the Plains and Midwest— did not provide support. Beef demand — not cattle numbers or weights — is at fault as consumers, despite improvements in the economy, continue to shift around and down in their protein purchases to less-expensive categories and cuts in those categories.
