In Victoria, southeast Australia, natural tartaric acid (NTA) supplier Australian Tartaric Products (ATP) has been reaping the benefits of a novel solution to its costly gas and electricity bills. Tartaric acid has many uses, and within the food and drink sector is used as an acidulant in carbonated and still beverages, beverage powders, gelatin desserts, hard and soft confectionary and pectin jellies. ATP uses grape leftovers from wineries from southern New South Wales, turning them into calcium tartrate and then into natural tartaric acid. The company estimates that it supplies around 70% of the tartaric acid used for winemaking in Australia, and almost 100% of the natural type.
