Witwood Food Products specialises in the development and supply of blended coatings to food processors worldwide, and attributes its ability to keep apace of food trends to its in-house research and development facility. Based at the company's UK headquarters, the 16strong Witwood R&D team is headed by technical director Dr John Lee. Three senior project managers, working with a learn of technicians, each look after a set of clients from Witwood's portfolio of frozen and chilled lood industry customers including meat, poultry, fish and vegetable processors. Initial research and the early stages of product development take place in the company's test kitchen. Products are developed by hand, and the state-of-theart kitchen is used for the developmentof new batters, breadcrumbs, pre-dusts, seasonings, glazes and marinades.
