Promising strides witnessed in past decade towards evolving scientific breeding, feeding and management practices for economic production which have established the guinea fowl as reputable meat producing bird of definite commercial value. The importance of determination of quality characteristics of meat lies in the fact that fresh meat is one of the major commodity with which the food technology is concerned, and the quality characteristics and preservation are two major aspects in fresh meat technology. The present investigation was undertaken to evaluate the chemical characteristics of guinea fowl meat.
