The poultry sector of modern India has transformed from backyard rearing to commercially organized, scientific and the fastest growing sector of livestock economy in the country except the recent temporary crises of avian influenza. A silent revolution has been taking place in the last four decades in Indian poultry sector to take India to a mark on the poultry map of the world. The poultry meat is very popular and consumption has increased very fast in recent years compared to other meat species. This is due to a number of desirable nutritional and organoleptic properties, no religious restriction, economical, quick and easy to prepare and serve as well as also due to rapid increase in human population, urbanization, industrialization, changing food habits and significant increase in the disposable income, ft is expected that the demands for the ready-to-cook or ready-to-eat chicken (meat) will also rise and in future poultry meat may likely be the major source of animal protein supply in India. However, the present per capita annual availability of poultry meat is 1.6 kg, which is much lower than the world average of 11.0 kg and 10.8 kg of the ICMR recommendation. This sector needs urgent considerable emphasis from the private and government authority to improve all aspects of poultry production and processing activities in order to meet domestic and export requirement.
