India is the leading milk producer in the world, but still there exists a problem of handling excess milk during the flush season. This requires all manufacturing facilities to be stretched to the utmost in order to avoid the waste of surplus milk. Aconsiderable part of surplus milk is converted to SMP and ghee, partly because these products are stable and partly because there is no need for extensive cold storage facilities. Sometimes, the drying capacity of plants becomes a limiting factor and sois the market demand of powder. The manufacturing of value added products like filled dairy products could be a better alternative to preserve valuable milk solids during the flush season. In addition, it would create a suitable platform for the utilization of coconuts and thus the technology will boost the economy and efficiency of dairy industry.
