Despite changes in tree density and diversity in the last few years in some coffee growing regions in India, the country continues to thrive as one of the few coffee producing countries in the World wherein coffee is cultivated under shade in environmental conditions that support exquisite flora and fauna. The coffee cultivation-processing practices in India are, by-and-large, environment friendly with coffee farms being multi-product enterprises that produce a range of primary outputs such as coffee, spices (pepper, cardamom etc.), and horticultural produce. The shade-grown coffee, obtained from fruits which ripen at leisure, produces a fine cup with delicate tones. Coffee connoisseurs across the globe recognize this uniqueness of Indian coffee, and leading roasters offer Indian coffee as individual and blended products.The Coffee Board of India has identified thirteen regional coffees and three specialty coffees which are distinguishable based on the growing conditions and cup characteristics.
