I first met Mrs. Johnson during the second week of my family medicine rotation. She was a kind 64-year old woman with light blue eyes and ashen-gray hair. She was also morbidly obese. She sat next to the computer monitor eating a bag of potato chips, a snack she had quickly picked up from the vending machine in the lobby prior to her appointment. I had just finished reviewing her list of medications. She was on three blood pressure pills, a statin, beta-blocker, baby aspirin, and insulin. After living with hypertension, coronary artery disease, and type 2 diabetes for nearly 23 years, she still continued to eat a standard American diet-one largely composed of meat, dairy, and processed food.
