The future of fish stocks in Australian waters is a murky topic and the health of our fisheries is not always clear. THE SYDNEY FISH MARKETS are one of the world's largest central seafood markets. Visit on any day of the week and you'll see huge displays of fresh seafood, most of it caught or grown in Australian waters. And that's just the retail section. Head there before dawn and witness the auction of row after row of boxes packed with freshly caught seafood of all descriptions, from fish and squid to crabs, prawns and shellfish - most of it destined for suburban and regional seafood outlets, fish and chip shops and restaurants. This supply chain for local consumption is mirrored in most capital cities. Meanwhile, at other facilities, large quantities of our top-priced seafood — Western Australian rock lobster, abalone, farmed southern bluefin tuna and Gulf of Carpentaria prawns - are exported annually to Japan, China, the USA and Europe.
