John and Sally Fairley, dairy farmers from Picton, New South Wales, made the brave move to hold onto their dairy farm when the Government deregulated dairy farming in 2000 and decided to value add to their business and self their milk direct to consumers. It's a move that has presented plenty of challenges but is now reaping financial and personal rewards as a growing percentage of consumers want to know where their food comes from and what's in it. The Fairley family have lived in the valley for more than 150 years, farming everything from peas to cattle. The dairy component started in 1958 - by John's father, uncfe and grandfather and now by John and his brother Peter. In 2001, John took ownership of the dairy and Peter operates a cattle raising business on the remaining land.
