There are many reports in scientific literature suggesting a general link between the oxidation of the lipids in the membrane surrounding each cell and the collapse of the plant tissue that is made up of those cells. Some of the treatments (for example, hot water dipping) applied (as part of this project) to navel orange fruit before low temperature storage, and seen to have an effect on the incidence of chilling-related postharvest rind breakdown, are also known to affect the activity of anti-oxidant enzymes in other citrus fruit. Accordingly, the focus in the 2004/05 navel season was the possible linkage between lipid oxidation, which is counter-acted by anti-oxidant enzymes, and the development of chilling-related postharvest rind breakdown in navel oranges.
