From a long list of awards to world-wide media attention, the Charles Sturt University (CSU) cheese factory at Wagga Wagga, NSW, has, in just over four years, become one of the best known in Australia. The brain child of founding Vice-Chancellor, Professor Cliff Blake,the factory, managed by cheesemaker, Barry Lillywhite, is home to a range of gourmet farmhouse cheeses, which are now sold in selected supermarkets throughout Australia. These include the Australian Native Flavour Collection - bush tomato, native mint, forest berry, pepperleaf and native lemon myrtle - as well as mild and mature cheddar, fresh ricotta and fetta marinated in a traditional and an Australian native marinade.
