Utilization of some dairy by-products in lactulose production using natural sepiolite 'Mg-silicate' or alkaline treated.

摘要

Lactulose is a disaccharide used as a bifidus growth factor and a humanizing agent in infant formula. It is synthesized from lactose in an alkaline environment. Natural sepiolite or alkaline-substituted sepiolite were investigated as catalyst for the isomerization of lactose to lactulose. This study reports on the production of lactulose from different substrates such as lactose solution, milk permeate and simulated milk ultrafiltrate (SMUF) with or without calcium.
