Achange is as good as a rest, the saying goes. When it comes to granu-lator and shredder knives, a change - or perhaps just a sharpening - is even better than that, since a granulator or shredder performs best and most economically when blades are sharp. The downside is that, when blades are being sharpened or replaced, the machine is down and production is halted. Which might explain why some processors neglect sharpening or changing their knives. "Most processing shops don't change their knives as often as they should," said Bob Harrison, product manager, size reduction group, with Universal Dynamics Inc. "We see this most often with shops that have older granulators and shredders that only allow knives to be adjusted after installation, or that limit adjustment to one set of knives, which isn't conducive to easy knife changes."
