THIS column gets some things "off my chest" that have bothered me for a long time.These days, the industry is constantly on the defensive for animal welfare and environmental issues, even beef's role in a healthy human diet. No wonder consumers are confused by constantly changing human nutrition messages.Expect more confusion ahead, possibly even from USDA. A controversial environmental nutritionist, advocating meat and dairy products from animals fed only grass diets, was appointed to head USDA's Center for Nutrition Policy and Promotion.
