THE breadfruit tree (Artocarpus altilis) arose from obscure Pacific origins but, once discovered, was planted throughout the tropics as a widely eaten starch staple. Why were the huge and heavy green fruit, the size and shape of cannonballs, called 'breadfruit'? Because the ripening fruit with a yellowish colour are roasted to produce flesh which can be sliced and eaten like bread. What's more, the texture is bread-like with a taste of potato. Everything about the breadfruit is big: size of the fruit, high yield, large leaves and trees attaining 30 metres.
