I'VE NEVER been to mainland China but over the years I have built up an understanding of the Chinese approach to fish and seafood simply by working within the aquaculture industry in the UK. China is the'new' market for salmon producers, with potential demand from more than 1.3 billion people possibly driving the market for years to come. However, I am not sure I share the same optimism.Many years ago, I was involved in growing carp at one of the then major Yorkshire coal fired power stations. Cooling water from the generators was diverted into tanks and then back to the cooling towers.
