Thanksgiving is a veritable feast-even for vegetarians! Consider Queen of the Harvest Hubbaid Squash, stuffed with wild rice, cracked rye, or bulgar/wheat chestnut stuffing. Of course season traditionally with parsley, sage, rosemary, and thyme-alongwith minced onion, celery stalks and leaves. Coarsely grated carrot can also be added for color as well as flavor. We bake our Mother Hubbard whole-for about an hour if it is large-meanwhile cooking the wild rice or cracked grain; shelling and slicing the previously roasted chestnuts; lightly sauteing onion, celery (or grated celeriac) & carrot; and tossing stuffing with herbs.
