Starch - a renewable polysaccharide and natural polymer- can be produced from a number cereals and tubers including corn, tapioca, millet, rice, potatoes and wheat, to name a few. Its usage encompasses direct use in a variety of applications, as well as conversion to chemical derivatives and breakdown into monomeric and/or oligomeric components leading to production of sweeteners such as dextrose, glucose, fructose, maltose and polyols such as sorbitol.
