In order to clarify and control Salmonella contamination of oil meal, we investigated its ability to survive in the environment of an oil-meal manufacturing plant, particularly on the operating floor. Consequently, the following results were obtainedin the relationship between oil from oil-meal plant. 1) Survival of Salmonella in normal oil-meal sample became so high that storage temperature is low. Survival of Salmonella in high oil-meal tended to be higher than in normal oil-meal at all temperatures. 2) Survival of Salmonella in normal oil-meal sample became so high that storage relative humidity is low. The survival of Salmonella in immersed oil-meal was substantially higher when compared to non-immersed oil-meal under conditions of high relative humidity. 3) Among oil-meal samples having oil content of 30% or more in the operating floor, 10 of 12 (83.3%) had numbers of Salmonella of more than 10~3 MPN per 100 g. Higher oil content oil-meal has the high numbers of Salmonella,4) S.Agona, S.Anatum, S.Albany, S.Havana, S.Mbandaka, S.Liverpool and S.Tennessee, which were isolated over a period of 3 to 5 years in oil-meal plant A, were found to have the same PFGE electrophoresis patterns after digestion with Xbal and BlnI. We showed that Salmonella survived long periods of time in oil-meal plant A.
