The paper discusses the changing nature of the UK food chain, noting the extent to which it is becoming more consumer-driven and affected by globalization. In particular it discusses features of consumer expenditure on food, consumer behaviour, thechanging market place, supermarket diversification, the benefits of partnerships in the food chain, and increased global sourcing by retail outlets to satisfy consumer demand for variety.
