摘要

Pentyl radical was detected in the reaction mixture containing an oxidized linoleic acid using high performance liquid chromatography with electrochemical detection (HPLC-ED) in combination with spin trapping with α-(4-pyridyl 1-oxide)-N-tert-butylnitrone (4-POBN). Both reduced and radical forms of 4-POBN/pentyl radical adduct were detected in the elution profile of the HPLC-ED set-up. Concentrations of the radical and reduced forms of 4-POBN/pentyl radical adduct which form in the reaction mixture of an oxidized linoleic acid with ferrous ion were 590 nmol/L and 11 nmol/L, respectively. Chlorogenic acid, a polyphenol, inhibited the formation o both reduced and radical forms of 4-POBN/pentyl radical adduct.
