Give her a decent gallon, and she'll give you a decent pint. It's pretty remarkable how the cow adapts herself to changes in climate. One minute the freezing rain is running down her sides, and the next she's under a grilling sun with a coat so hot you can hardly put your hand on it. Most cows - like the rest of us -seem happy to loll around on a sunny day, provided there's plenty to drink. Looked at in one way, the cow is a sophisticated water processor. For every litre of milk you get out, she needs five litres to process. That means a heavy milker can drink 150 litres/day, and if she can't get hold of this quantity she cuts down what goes in the udder - her yield.
