Some of Canada's best restaurants - including upscale dining establishments in Ottawa, Montreal and Toronto and even a few in Nova Scotia - are keeping the Sustainable Blue fish-farming company jumping. The company is the country's only source of cultivated Mediterranean sea bass {Dicentrarchus labrax) and seabream (Sparus auratd). These fish, along with Arctic char, are grown at Centre Burlington in Hants County, Nova Scotia, close to the Bay of Fundy, using state-of-the-art technology, designed in-house, for introducing these two European species to North American palates.
