EICONOMIC conditions during the last five years have forced the raisin industry in California to rapidly move forward with a transition that began about 25 years ago. The transition has two aspects. One is the mechanization that began about 1980, andthe second is the introduction of a technique called dried-on-the-vine (DOV) raisin production. In 2004, it is estimated that 15% to 20% of the raisins were produced with some level of mechanization and/or DOV. This compares with about 1% of the crop production using these techniques in 2000. The production of raisins has traditionally been a labor-intensive operation that begins with hand picking of grapes that are placed on a 24-by-36-inch paper "tray" which has been laid on the smoothed soil surfacewithin the vineyard rows. The grapes are then allowed to dry into raisins in the warm California sun during a 12- to 14-day period. Approximately 1000 of these "trays" are picked per acre.
