Looking at your coating application, I would double-check your mixer positioning. If the mixer is placed in the center in an un-baffled vessel, your product will not become uniformly distributed during the mixing process. The longer the agitation operates, the more the heavier product will sink to the bottom of the vessel and the lighter product will work to the top of the tank. Once the product is pumped away from the vessel, you will have inconsistent aspartame and canola oil being strayed on the flakes. This could cause the spray nozzles to plug or become inconsistent. To resolve the problem you need to place baffles in the vessel, or place the agitator in a 10° angular offset position. The end result will be uniform coating on the cereal. In addition, I suggest using a dish-bottom vessel to provide better mixing for this process.
