SOLID-liquid separations have a long history in the field of food processing - consider the production of cheese by pressing in antiquity, the production of fermented products, eg beer, in earlier millennia, or the early production methods for refined sugar. In some instances the methods used for the separation in pre-modern times have survived in modified form into the industrial age. The use of the filter press, the subject of much of this book and of related books by the same authors, became a practical reality somewhat later.
