Fruits and vegetables are an important group of protective food. These are indispensable for maintaining good health and proper nutrition. The usefulness of fresh fruits and vegetables is limited because after certain period of time these can not be kept in good condition. After maturity and ripening these fruits and vegetables start turning brown, produce foul smell and lose firmness due to moisture loss by evaporation. Even the appearance and taste of these fruits and vegetables get affected considerably by different microorganisms and become unfit for human consumption.
