This report from a study tour in South Africa organized by ITV (Institut Technique de la Vigne et du Vin) Midi-Pyrenees starts by outlining the history of viticulture in South Africa, and then goes on to look at various technical considerations relating to South African viticulture. These include discussion of: the favourable climate for viticulture in the country; an outline of phytosanitary problems (infections by Oidium mildew, Botrytis and mealybugs (Planococcus ficus)); the use of bush vines, which have many followers; the Pinotage grape, which originates from South Africa; the 'nouveau monde' (new world) fermentation for white wines; and an example of winemaking procedures, as exemplified by a brief case study for Sauvignon blanc.
