摘要

This paper considers the detailed composition of milk and from where these components are derived, and the relationship between milk composition and the quality of the products produced. It is restricted largely to examining the effects of nutritional factors on milk composition and product quality. The current research programme at the New Zealand Dairying Research Corporation which aims to manipulate milk characteristics through farm practices in order to enhance product quality is also outlined.
