A European dilemma: To wash or not to wash eggs?

The washing of table eggs is common practice in some countries, prohibited in others and optional in many. What are the pros and cons of egg washing and what is the latest science telling us? Taking very different but lepresentative views, three presentations about egg washing were made at the 11th European Symposium on the Quality of Eggs and Egg Products, which was held in May at Doorwerth in the Netherlands.
