Rooibos (ROY-boss), Afrikaans for "red bush," has been popular for generations in South Africa, where it's served with milk and sugar. The high level of antioxidants and lack of caffeine made it a hit among health-conscious consumers - and have now made it a hit in the U.S. According to Paul M. Flowerman, president of PL Thomas Inc., Morristown, N.J., rooibos imports to the U.S. rose about 300 percent between 2001 and 2005, and could surpass 250 tons by the end of this year.
