In the years of the 50th anniversary a series of publications isstarted to introduce the activity of the Research Institute of the Hungarian Sugar Industry from the time of foundation to the present. The third part introduces results on the field of juice purification technology including ionexchange methods. Changes of juice quality due to sucrose inversion, invert sugar destruction, colour formation, questions on alkalinity are discussed with special attention to the work of K. Vukov. Decalcification methods elaborated by E. Gryllus are also discussed with more detail.
