As the population continues to age, the increasing incidence of lifestyle diseases is now being recognized as an imminent issue. To create a vital society with healthy seniors, it is important to prevent illnesses as well as to cure them. In this context, dietary habits are in the spotlight as a critical means of maintaining and improving health conditions while reducing the risk of developing illnesses. There is a growing expectation that functional food will play a key role in such a society. The industry is stepping up its efforts to develop new functions and discover new materials, and also to create food technologies to which they may be applied.
