Why people with celiac disease suffer so soon after eating gluten

Researchers may finally know why people with celiac disease get sick within hours of eating gluten. Some immune cells dump stomach-churning levels of immune chemicals called cytokines into the blood soon after encountering gluten, scientists report August 7 in Science Advances.Scientists knew that in celiac disease some of these immune cells, called CD4+ T cells, react to gluten proteins in wheat, barley and rye, leading to damage of the small intestine. But normally, T cells don't rev up until a day or two after exposure to a trigger.
