It was a Russian doctor by the name of Osip Krichevsky who made the first powdered milk in May 1802. It has become a popular alternative to dairy milk in many developing countries because of increased shelf life, convenience, reduced transport and storage costs (removing water reduces bulk and weight, and does not require refrigerated vehicles). Hydrous milk contains approximately 88% water, whereas dried dairy products have even greater amounts of water removed. Powdered milk tastes a lot better than it used to. If you haven't tried it in the past few years, it's worth another taste. When mixed correctly and chilled overnight, it has a pleasant, sweet flavour that tastes especially good in home-made baking. In cooking, powdered milk performs flawlessly. It can be substituted for fresh milk in almost any recipe with excellent results.
