摘要

The nutrition transition is characterised by radical changes in diet composition. Diets shift from traditional foods, which include high levels of grain, fibre, vegetable and fruit consumption to "westernised diets" high in fat, sugar, animal proteins and sodium (Popkin, 2002). Studies on the nutrition transition in China indicate that higher levels of obesity are currently accompanying the surge in economic development and increased urbanisation (Popkin, 2001). The US is an example of a country which has fully undergone the nutrition transition and both obesity levels and eating disorders are now very high there (Centers for Disease Control and Prevention, 2001).
