In the early years of the United States, most farmers raised, slaughtered and processed their own livestock for their own consumption. And because agriculture, in general, was so labor-intensive, many farmers sought help from local butchers who specialized in this craft. Those pioneer processors slaughtered and processed entire animals and used wagons to pick up hams or pork bellies to cure at a single location. But whatever the project, the era of meat service was well underway.rnIn the early 1900's, when the industry began taking advantage of refrigeration, ice houses and even a smattering of gasoline-powered trucks, the mobile slaughter trade was born.
