Every day, millions of pounds of carcass weight move through beef and pork plants on overhead rail systems, a journey sometimes stretching over a mile long. While this usually proceeds without incident, when a disruption occurs, the result is a carcass that falls from the rail to the floor. When that happens in proximity to workers, it can result in grave injury. Attesting to the serious nature of such an incident, veteran safety consultant Eric Reynolds says, "The consequences of a side of beef or a hog falling on someone is huge. The frequency is low, but the severity is very high."
