Pan-coated candies are produced by the application of successive layers of coating to suitably shaped centers as they tumble in a revolving pan. Panned confections evolved from pills or dragees that were hand rolled in sugar by apothecaries as a means of disguising the unpleasant taste of their medicines. According to Ron Lees, the term dragee is believed to have originated from Julius Dragatus, a Roman confectioner who developed a coated confection around 177 BC. In Europe, pan-coated confections are still often called dragees.
