PMCA has opened registration for its Premium Chocolate Centers short course which will be held Tuesday, June 5, through Friday, June 8, at Gertrude Hawk Chocolates (Dunmore, Pennsylvania). Structured to allow maximum time for hands-on work, the course will offer opportunities to practice a variety of skills learned in class. The composition and structure, basic recipes, shelf life and manufacture of a variety of centers will be featured: fondants, cremes, cordials, ganache, truffles, pralines, gianduja, meltaways, croquant, sugar crust, soft caramels and fruit gels.
