PISCO POWER

Even for the savvy spirits lover, Peruvian pisco can be a bit of a conundrum. This distilled spirit is made from fermented grapes in pot stills, much like Cognac, then bottled as an unaged white spirit, more like vodka, sometimes with varietal grape names and other times as a blend, reminiscent of grappa. To top it off, most of pisco's mainstream news headlines refer to the sibling rivalry between Chile and Peru over the name "pisco" itself.
