In Food and Knowledge in Renaissance Italy, Deborah Krohn brings much needed attention to the genre of culinary illustration. For far too long, even scholars who are fully focused on food's roles in culture have failed to address the work that images perform in cookbooks. By bringing close attention to the first illustrated European cookbook, Krohn helps to lay the groundwork for future work on this topic. Her chosen text is Bartolomeo Scappi's Opera, first published in Venice in 1570. By writing about what she terms 'paper kitchens', Krohn helps us to see the kitchen as equally conceptual and real in the global history of cooking and eating. By asking, 'why illustrate a cookbook?' she troubles the general neglect of the image as meaning-maker and message-carrier in cookbooks.
