Despite advances in other technologies, cryogenic freezing is the most appropriate freezing method for many food manufacturers, according to recent independent research. In his report, "Review of cryogenic vs mechanical freezers," Dr Chris Kennedy compared the latest innovations in freezing equipment and concluded that cryogenic freezing offers significant cost, time and quality advantages over mechanical technologies. These objective insights will come as welcome news to food developers looking for routes to increased productivity and quality in today's competitive climate.
