Technology of Vitamin A Fortification of Foods in Developing Countries

Vitamin A fortification of foods has been a desirable strategy to eliminate deficiencies in developing countries but has been difficult to implement. This article describes some of the difficulties in developing suitable fortificant technology. Vitamin a deficiency causes the deaths of approximately 500, 000 children each year in developing countries. Marginal vitamin A status probably contributes to reduced survivability in response to respiratory and diarrheal diseases and increases mortality 3-4 times. The health of children in developing countries is seriously compromised by their vitamin A status (Underwood, 1990).
