The New Rids on IFT's Block

More than 130 companies will be first-time exhibitors at the 1996 IFT Food Expo in New Orleans. Of these, nearly half are ingredient suppliers. What kinds of ingredients will be shown by these new exhibitors? And what dominant trends will these ingredients suggest? This column will attempt to answer these questions as it previews what the "new kids on IFT's block" are showing this year.
